The broth · 豚骨

Started before you wake. Ready by lunch.

There are no shortcuts to a proper tonkotsu. Every night, while the Northern Quarter is still out, our pot goes on — and it doesn't come off until the broth is thick enough to coat a spoon.

  1. Hour 0Pork trotters and femur bones blanched and scrubbed clean.
  2. Hours 1–8A hard, rolling boil to break down the marrow and collagen.
  3. Hours 9–16Topped up, stirred, emulsified — the broth turns milky white.
  4. Hour 18Strained, seasoned with our shio tare, poured into your bowl.

How it works

Simple, like a proper ramen-ya.

一

Just walk in

We don't take reservations — the counter is first come, first served. If it's full, leave your name and we'll text you when a stool frees up. Most waits are under 15 minutes.

二

Sit at the counter

22 seats facing the pass. Best for solo diners and groups of up to four. Bowls arrive in about eight minutes; most people stay for half an hour.

三

Or take it home

Ring us and collect from the door. Broth and noodles are packed separately so nothing goes soft on the way home — reheat for two minutes and it's like sitting with us.

Regulars

Worth the queue, apparently.

“The closest thing to Fukuoka I've had in this country. I'm in twice a week and I always ask for kaedama.”

— Kenji, Ancoats

“Went in on my own on a rainy Tuesday, came out warm and very happy. The black garlic bowl is unreal.”

— Sophie, Chorlton

“The vegan bowl isn't an afterthought — the shiitake broth has real depth. My go-to after work.”

— Priya, Northern Quarter
